If the yankees had a 1/5 odds of winning and 99% of the people bet on the yankees that just means the casinos have more exposure to the yankees winning. If they won the casino is still has more to lose than the other 1% that bet on the other teams. Their bets won't cover the betters who bet on the yankees.

all i am trying to say is just because the odds of all the possible outcomes add up to a 2% house advantage it is only so if there were equal amounts bet on each team. If one team is heavily bet against it doesn't matter what the odds are given the sum of all the other bets will not cover the bets placed on that particular team and make the house a 2% profit.
