    PM is correct.....in simple terms, a crawfish is a fresh water version of a saltwater shrimp......they are typically about the side of a medium shrimp.....very popular in Louisiana....

    I just read they taste like a cross between shrimp and lobster, but they absorb sauce really well, so that's how they're usually prepared. I'd make up my own sauce. :)

    The crawfish around here are a light brown...not red like shown in the pics....don't know if the red is from the peppers they are cook in or if there are different types of crawfish in different regions. And I think they call our local variety crayfish. :dunno:

    Well, I never had any Cajun food until about 25 years ago.....and I like it....the jumbolia and various gumbos....almost all of it has rice (plentiful in Cajun territory), veggies, and a sauce that is very spicy. Any meats can be added, but usually it is chicken, shrimp or any other sea/bayou animals, and sausage (not necessarily mixed together.)
