    I've felt the same way about the couple of interview clips I've caught. I think my expectations were lower when he was working from home, and now that he's back in the studio those expectations have risen. I think Jimmy works best when playing off of and working in front of a crowd, so he's just not currently in his element.

    That, or he just sucks now. ;)

    Don't go super cheap on the dehydrator. I currently use an expensive one but the middle level ones do fine for 95% of drying. Also ... buy and use (and cut to shape) Costco parchment paper. I do lots of drying for canoeing trips. (and just because jerky is good lol)

    Edited to add : mine is an Excalibur 9 tray
